Homemade Granola

Most packaged granolas, even the small batch, artisanal granolas lining your grocer’s shelf, are high in processed sugar and unhealthy fats, ingredients most of us are trying to cut down on or avoid entirely these days. Our recipe brings together shredded coconut, gluten-free oats, nuts, seeds, raw honey and warming spices to provide a slightly sweet, anti-inflammatory alternative to store bought granolas. 

This recipe can be customized for personal taste, but we love to include Brazil nuts for a healthy dose of selenium, an essential mineral that promotes healthy brain and thyroid function. 

INGREDIENTS:

  • 4 cups gluten-free rolled oats 

  • 1 cup shredded unsweetened coconut

  • ½ cup raw Brazil nuts, coarsely chopped

  • ½ cup raw almonds, coarsely chopped 

  • ½ cup walnuts,chopped

  • ½ cup pumpkin seeds

  • ¼ cup sunflower seeds

  • ¼ cup coconut oil

  • ⅓ cup honey

  • 2 tbsp maple syrup

  • ⅓  cup dried unsweetened cherries, chopped. Currents and chopped apricots work well too

  • 1tsp vanilla extract

  • ½ tsp cinnamon

  • ½ tsp cardamom

DIRECTIONS:

  1. Preheat the oven to 325°F

  2. Set aside the maple syrup and currants (or other dried fruit

  3. Place all the remaining ingredients  in a roasting pan.

  4. Mix everything together until well combined.

  5. Bake for 15 minutes, and then stir  together again with a spoon.

  6. Bake for another 15 minutes, then spoon maple syrup over the granola and stir together until well-mixed.

  7. Bake for an additional 10 minutes or until the mixture turns a golden brown.

  8. Remove from the oven and mix-in dried cherries or dried fruit of choice.               

Spoon over unsweetened Greek, coconut or almond milk yogurt. Add berries and enjoy.
