Roasted Artichokes


Artichokes are brimming with vitamin c, vitamin k, potassium, magnesium and polyphenols, earning them a top 10 spot on the US Department of Argriculture’s list of antioxidant rich vegetables. They are also packed with gut loving fiber to support healthy digestion and a thriving microbiome.

Unfortunately, this veggie doesn’t make it onto the dinner table with much regularity as many home cooks find the artichoke's tough exterior and thorny petals intimidating. This simple, nutritious, delicious recipe for roasted artichoke hearts swaps out fresh for frozen artichoke hearts, making it easy to incorporate this veggie into any weekday meal. 

Enjoy them as a side dish, appetizer, salad/grain bowl topper, or healthy snack. We find the salty, savory taste satisfies that “I need a chip right now” craving when it it hits, minus the guilt.

Roasted Artichoke Hearts:

Ingredients:

  • 12-ounce bag frozen artichoke hearts

  • 2-3 tablespoons of extra virgin olive oil 

  • Sea salt

  • Black pepper

  • Smoked paprika

  • Lemon

Directions:

  1. Preheat the oven to 425 degrees. 

  2. Thaw frozen artichoke hearts then wrap and press them between paper towels to remove excess water. 

  3. Transfer to a medium size mixing bowl and gently toss with olive oil to coat. Sprinkle to taste with crunchy sea salt, freshly ground pepper and smoked paprika to taste.

  4. Transfer to a large baking sheet.

  5. Roast 20-25 minutes, tossing halfway through. 

  6. Remove from the roasted artichoke hearts from the oven

  7. Plate and give it a good squeeze of fresh lemon juice.

Serve as a side dish, salad or grain bowl topper or enjoy as a delicious, healthy snack.
