Cherry Tomato Salad with Fresh Herbs and Red Onions

Late summer is peak tomato season, and we’re here for it.  Pick up some of these late summer beauties at your local Farmer’s market today and whip up this simple, seasonal tomato salad.

INGREDIENTS  

1. 2 pints fresh cherry tomatoes halved

2. 1/2 red onion. thinly sliced

3. 2 tablespoons red wine vinegar

4. 6 tablespoons extra virgin olive oil

5. 2 tablespoons fresh basil chopped.

6. 2 Tablespoons fresh cilantro, chopped

7. 2 tablespoons fresh dill, chopped

8.Sea Salt and freshly ground black pepper to taste

INSTRUCTIONS

1. Place cut tomatoes and red onions in a serving bowl, and set aside.

2. Vinaigrette: In a small bowl, whisk together olive oil and red wine vinegar. Season to taste with crunchy sea salt and black pepper.

3. Drizzle vinaigrette over prepped tomatoes and onions and give it a good toss.

4. Add in freshly chopped cilantro, basil, and dill ,and give it another toss.

5. Season to taste with sea salt and pepper.
